Miso

Miso is fermented soybeans with koji (a fermentation starter).  It differs in colours(red, white) as well as in regions(Saikyo miso, Hatcho miso).  It's an extremely nourishing and well-balanced food containing protein, vitamins and essential amino acids.  Most famously used in soups, it can add flavour to many dishes.
